The wood ash used in their preparation breaks down the corn's cell walls, making niacin (a B vitamin that plays a role in cell signaling and DNA repair) available, and also releases amino acids for better absorption by the body."

Buettner further elaborates, "The black beans contain the same pigment-based anthocyanins (antioxidants) found in blueberries. They are rich in nutrients, aid in colon cleansing, lower blood pressure, regulate insulin levels, and are packed with folates, potassium, and B vitamins. When combined with rice, the bean-and-rice combination forms a complete protein, providing all the essential amino acids required for human sustenance."
